Domaine de Cambis was established by Annick and Alfred Perolari in 2004, in a village cellar in Berlou. Annick vinified her first wines there until 2016. Their son Martin joined them, the family built a new winery, and then began organic farming conversion in 2018. The estate has been AB certified since the 2021 vintage. In January 2019, Martin took over the reins alone. Today, he vinifies 17 hectares of vines on the schist hillsides of Berlou, true to a conviction: wine is a product of pleasure, to be shared.

In Berlou, the vines grow on some of France's oldest brown schist, dating back to the Ordovician period – between 488 and 415 million years ago. A rare, poor, well-draining rock, which forces the roots to go deep. Nestled at the bottom of the Rieu Berlou valley, our hillsides are oriented North-West/South-East: sheltered from the Tramontane wind, away from large temperature variations. The altitude – between 250 and 450 meters – brings cool nights during ripening. This nocturnal freshness contributes to the finesse of our wines. On these plots, some Carignan vines are almost a century old. They produce little, but they tell a story.
