Back to the Nature Rosé is the freest cuvée at Domaine de Cambis — a Pétillant Naturel (PetNat) made from 100% Mourvèdre, born on the schist terroirs of Berlou, in the Hérault. In a single sip it sums up winegrower Martin Perolari's philosophy: get back to the essentials, let nature express itself without artifice, without sulphites, without filtration.

This organic natural sparkling wine from the Languedoc is made under certified Agriculture Biologique (certified organic) farming on the brown schist of Berlou (Hérault, 34360). The grapes are bottled directly during fermentation, capturing all the vitality of the fruit at the ideal moment. No added yeast, no added sulphites, no filtration — a natural-wine philosophy taken all the way.

Terroir & Grape Variety

From Mourvèdre grown under Agriculture Biologique on the schist terroirs of the AOP Saint-Chinian Berlou appellation, at over 300 metres of altitude. The poor, free-draining schist soils of Berlou (Hérault) force the vine to dig deep, producing grapes concentrated in aromas and endowed with a fine natural acidity — a hallmark of organic wines from the Languedoc grown on high-altitude terroir.

Aromatic Profile

An explosion of fresh red fruits — wild strawberries, raspberry, redcurrant — carried by a fine, persistent effervescence. The palate is lively and crunchy, with a festive lightness that immediately calls for a second sip. No heaviness, no artifice — a signature of Domaine de Cambis that celebrates the purity of the fruit.

Serving temperature

Serve very chilled, between 3 and 5°C. Keep the bottle upright to preserve the natural sparkle.

Perfect as an aperitif, with light tapas, slices of bread topped with fresh goat's cheese and herbes de Provence, or strawberries with basil. It pairs deliciously with red-fruit salads or lightly sweetened desserts. Ideal for summer meals and convivial moments outdoors, Languedoc style.
