The Berlou Terroir, the Soul of Domaine de Cambis Wines

In the northern part of the Saint-Chinian appellation, perched on the foothills of the Haut-Languedoc, Berlou is one of the appellation's two communal crus. Its schist soils, microclimate, and traditional grape varieties give rise to wines of rare singularity.

Berlou, a Rare Cru in the Heart of Languedoc

The Saint-Chinian appellation comprises 300 winemakers spread across 20 villages, characterized by two major geological formations: schists to the northwest and limestones to the southeast. At the heart of the schist zone, two communal appellations stand out: Saint-Chinian Berlou and Saint-Chinian Roquebrun.

Berlou is a small village of 150 inhabitants, nestled at the foot of the Cévennes and the Montagne Noire. This communal appellation, exclusively reserved for red wines, imposes stringent criteria on its winemakers: mandatory manual harvesting, impeccable sanitary conditions, grapevines at least 10 years old, mandatory presence of Grenache, Syrah, Mourvèdre, and Carignan, a minimum slope of 5%, and an altitude between 100 and 400 meters.

Schist Soils, Berlou's Signature

The Berlou terroir rests on brown and blue schists, formed nearly 600 million years ago during the formation of the Hercynian mountain range. These metamorphic rocks, fragmented into fine lamellae, offer perfect drainage and force the vine to plunge its roots deep to seek water and minerals.

This natural constraint is a blessing: it gives the wines a unique minerality, notes of smoked stone, a characteristic tension, and remarkable aging potential. Wines from Berlou's schists are recognized by their freshness on the palate, their complex aromas of dark fruits, garrigue, and spices.

Berlou's Microclimate

At Berlou's altitude (between 200 and 400 meters), the Mediterranean climate meets the cooler influences of the Haut-Languedoc. Warm, sunny days are refreshed by cool nights descending from the Cévennes. This diurnal temperature range promotes slow and complete grape ripening, preserving natural acidity and aromas.

The winds—Tramontane and Marin—naturally sanitize the vineyard, limiting diseases and allowing for organic farming without excessive difficulty.

The Domaine cultivates traditional Languedoc grape varieties, perfectly suited to the Berlou terroir:

For Red Wines

  • Carignan — The king grape of Berlou, which expresses all its nobility here. Old vines, sometimes centuries old, with modest yields.
  • Grenache — Brings warmth, ripe red fruits, and generosity.
  • Syrah — For tannic structure, peppery notes, and depth.
  • Mourvèdre — Provides aging potential, complexity, and depth.
  • Cinsault — For suppleness and elegance, especially in rosés.

For White Wines

  • Grenache Blanc — Provides richness and roundness.
  • Roussanne — Gives floral aromas and aging potential.
  • Vermentino — For freshness and citrus notes.
  • Viognier — Brings aromatic richness and tension.

One Terroir, One Vision

At Domaine de Cambis, each parcel is cultivated according to its specificities. Old Carignan vines, some a hundred years old, are vinified separately to express their unique character. Iconic cuvées such as Caudomato, Les Jardins Suspendus, or Rock de Carignane each reflect a parcel-specific approach and a particular terroir.
