Barroco 2024
Barroco is the UFO of the Domaine de Cambis range. A red wine made from 100% old Cinsault on schist soil that surprises even the greatest experts — capable, when tasted blind, of being mistaken for a Burgundy Pinot Noir. Yet it's pure Cinsault, a grape variety almost extinct in the Languedoc, produced on the mountain terroir of Berlou (Hérault).
Originally, these old Cinsault vines were intended for rosé. It was by daring to vinify them as a red that Martin Perolari, an independent winemaker in Berlou, discovered extraordinary potential. Barroco is the fruit of boldness and conviction: on good schist terroirs and with the right grape varieties, the most surprising wines are often the simplest in appearance.
Terroir & Grape Variety
100% old Cinsault grown under certified organic farming on the schist terroirs of the AOP Saint-Chinian Berlou appellation. The old vines, stressed by the poor brown schist soils and the altitude (300m), produce small quantities of grapes with exceptional concentration and finesse — one of the best arguments for preserving the old grape varieties of Languedoc.
Aromatic Profile
A light garnet color with ruby reflections. A promising nose with floral notes (violet, peony) followed by black fruits (blackcurrant, blackberry). The palate surprises with its crisp attack and beautiful complexity: licorice, candied black fruits, sweet spices. Silky tannins, elegant finish — a red that is both gourmet and refined, a signature of the organic wines of AOP Saint-Chinian on schist.

Serving Temperature
Serve slightly chilled between 15 and 16°C to reveal all the aromatic freshness of this organic Cinsault from Berlou.
Aging Potential
Can be aged for 3 to 5 years to develop a beautiful complexity. A curiosity in the range of red wines from Languedoc.
Food Pairings
Perfect as a friendly wine with charcuterie (figatelli, smoked duck breast), pissaladière, duck breast salad, or a cheese platter from the Languedoc garrigues. Also pairs well with light Mediterranean dishes — a sunny cuisine for a schist wine from Berlou.
