Barroco is the maverick of the Domaine de Cambis range. A red wine made from 100% old-vine Cinsault grown on schist, it throws even the finest experts off the scent — tasted blind, it can bring a Burgundy Pinot Noir to mind. Yet it is pure Cinsault, that grape variety which has all but vanished from the Languedoc, grown on the mountain terroir of Berlou (Hérault).

These old Cinsault vines were originally destined for rosé. It was by daring to vinify them as a red that Martin Perolari, independent winemaker in Berlou, uncovered their extraordinary potential. Barroco is the fruit of boldness and conviction: on the right schist terroirs and with the right grape varieties, the most surprising wines are often the ones that look simplest.

Terroir & Grape Variety

100% old-vine Cinsault grown under certified organic farming on the schist terroirs of the AOP Saint-Chinian Berlou appellation. The old vines, stressed by the poor brown schist soils and the altitude (300 m), yield small quantities of grapes with exceptional concentration and finesse — one of the best arguments for preserving the old grape varieties of the Languedoc.

Aromatic Profile

A light garnet colour with ruby glints. An enticing nose of floral notes (violet, peony) followed by black fruits (blackcurrant, blackberry). The palate surprises with its crisp attack and fine complexity: liquorice, candied black fruits, sweet spices. Silky tannins, an elegant finish — a red that is both generous and refined, the signature of organic AOP Saint-Chinian wines grown on schist.

Serving temperature

Serve slightly chilled, between 15 and 16°C, to bring out all the aromatic freshness of this organic Cinsault from Berlou.

Cellaring potential

Will keep for 3 to 5 years, developing lovely complexity. A curiosity among Languedoc red wines.

Food Pairings

Perfect as a wine to share with friends alongside charcuterie (figatelli, smoked duck breast), pissaladière, duck breast salad or a platter of cheeses from the garrigues du Languedoc. It also pairs well with light Mediterranean dishes — sunny cooking for a wine born of the schist of Berlou.
