Carnet de Voyage is the prestige cuvée of Domaine de Cambis — an exceptional long-keeping wine awarded a Coup de Cœur (Favorite) by the Guide Hachette des Vins. It's an ode to discovery, an invitation to travel for a sip of Syrah aged in demi-muids on the schist soils of the AOP Saint-Chinian Berlou.

To produce this cuvée, Martin Perolari, an independent winemaker in Berlou (Hérault), patiently selected the best vines from the estate over several years. Unlike the other cuvées of Domaine de Cambis, Carnet de Voyage spends 12 months in demi-muids (600-liter barrels) of French oak for progressive oxygenation, which gives it a complexity and depth rare among Languedoc red wines.

Terroir & Grape Variety

100% parcel-selected Syrah, grown using certified organic farming on the schist soils of the AOP Saint-Chinian Berlou appellation (Hérault). The naturally low yields (15-18 hl/ha) produce grapes with a concentration of tannins and aromas that makes oak aging not only possible but revealing. The schist terroir of Berlou, at an altitude of 300m, brings the freshness and minerality that structure this great long-keeping wine.

Aromatic Profile

Nose

A deep purple color with violet reflections. The nose is intense and complex: oriental spices (pepper, cinnamon), then notes of roasting (coffee, cocoa) and candied black fruits. A nose that bears the signature of the great Syrahs on schist from Languedoc.

Palate

The palate opens with a smooth and velvety attack — the 12 months in demi-muid have perfectly integrated the wood. Aromas of very ripe black fruits, bitter cocoa, and sweet spices. Silky tannins, a long and persistent finish — the potential of a great long-keeping Languedoc wine, crowned by the Guide Hachette des Vins.

Tasting & Service

Serving temperature

Serve between 17 and 18°C. Decanting is recommended 45 minutes before serving to allow this great organic red from AOP Saint-Chinian Berlou to express itself.

Aging potential

Can be enjoyed young but reaches its peak after 5 to 10 years in the cellar. A great long-keeping Languedoc wine — awarded a Coup de Cœur by the Guide Hachette des Vins.

Food Pairings

Elaborate sauced dishes, Indian cuisine (tandoori chicken, green vegetable curry), Peking duck, aged rib of beef, strong aged cheeses. A celebratory wine that deserves great occasions and grand tables — on par with the finest moments of Languedoc-Roussillon gastronomy.
