At the heart of the schist slopes of Berlou, in the Haut-Languedoc, Domaine de Cambis grows its vines organically and continues a family story that began in 2004.
Who is Martin? A young organic winemaker in Berlou
Martin is the “young” winemaker of Domaine de Cambis. He took over the reins on his own in January 2019, when his mother Annick, the founding winemaker of the estate in 2004, retired. Although he had always been alongside his parents in the wine adventure, it was in 2014 that Martin really started working with Annick, after obtaining his BPREA.
Before returning to the vines, Martin had another destiny in mind. Management and international business studies, a return from Mexico in 2012, he was heading for a career in video games. That is when he changed course and went back to the benches of his old agricultural college in Montpellier to learn the winemaker’s trade.
The Perolari family then took advantage of the fact that the “next generation” was assured to launch the project of building a new cellar in Berlou, started in 2011 and completed in 2017. In the process, they began converting the vineyard to organic farming in the summer of 2018, which came to fruition with the 2021 vintage.
Martin’s vision
“For me, being a winemaker is a clever mix between respecting your terroir, bringing out its potential and making it accessible to as many people as possible.
When you look at Berlou, these are hundred-year-old vines that produce little, but good, very good! And you have to manage to showcase these juices while keeping them understandable for the consumer.
In my view, wine is still too complicated today and perceived as “elitist”, especially by young people. How many times have I been told at a tasting “sorry for the words, I don’t know anything about it”. I would like the people who taste my wine to let go! To appreciate it first for what it is, namely a convivial product to share with those close to you. Deeper analysis can come later. Wine is a pure pleasure product, and there is one for every occasion.”

A completed organic certification
After a first successful vinification in 2020, Martin obtained the Agriculture Biologique certification during the 2021 vintage. This approach is not a passing fashion at Domaine de Cambis: it is the culmination of years of committed work, respecting an exceptional terroir and a biodiversity that deserves to be preserved.
With his partner Caroline, project ideas are blossoming to open the doors of the estate to new visitors and to share this magical place with wine lovers and other bons vivants passing through the region.
An independent winemaker in Saint-Chinian Berlou
Domaine de Cambis is an independent winemaker and wine producer. Each cuvée is the fruit of work carried out entirely on site: from pruning to pressing, from vinification to ageing, through to bottling. This complete mastery allows Martin to express fully the richness of the schist soils of Berlou, an emblematic terroir of AOP Saint-Chinian.
Domaine de Cambis is also located within the territory of the Parc Naturel Régional du Haut-Languedoc, an area committed to preserving the natural and cultural heritage of the region.

The estate’s wines have been selected in the Guide Hachette des Vins since 2008, with a Coup de Cœur and 3 stars for Carnet de Voyage 2021. In January 2026, Decanter rated two cuvées 92/100. See all our distinctions
