Caudomato takes its name from an extraordinary plot in Berlou. In Occitan, Caudo means hot and Mato refers to the garrigue scrubland. This old 80-year-old Carignan plot, planted at more than 350 metres above sea level in the heart of the garrigue of Berlou (Hérault), faces due south. In summer, temperatures at the bottom of this valley can climb past 40°C — a furnace of heat that these old Carignan vines have faced with quiet vigour for decades on the schist of AOP Saint-Chinian Berlou.

Visited more often by wild boar than by people, this wild plot of the Domaine de Cambis brings together everything that defines the great organic wines of the Languedoc: brown schist, intense sunshine, fragrant garrigue and old vines that draw their strength from deep in the soil.

Terroir & Grape Varieties

A blend of Carignan (50%), Grenache (30%) and Syrah (20%), all grown under certified organic farming on the schist of the AOP Saint-Chinian Berlou appellation. The old Carignan vines (80 years) at 350 m altitude in the Hérault produce concentrated grapes with ripe, generous tannins — the purest expression of the schist terroir of Berlou.

Aromatic Profile

A deep garnet colour. On the nose, intense aromas of garrigue (thyme, rosemary, bay leaf) followed by ripe red fruit — the olfactory signature of the schist terroir. The palate is crunchy and full of life, with generous tannins that wrap around a fine fruity concentration. A spicy, lingering finish, the hallmark of old Carignan vines grown on the schist of Saint-Chinian Berlou.

Serving temperature

Serve lightly chilled between 15 and 17°C to appreciate the aromatic freshness of this organic red from the AOP Saint-Chinian.

Ageing potential

Will improve over 4 to 6 years of cellaring. A terroir wine from the Languedoc that reveals its full character after a few years in the cellar.

Food Pairings

Ideal with roast white meats, lamb with Provence herbs, Mediterranean cuisine, tagine, couscous or characterful cheeses from the garrigues of the Languedoc. A natural match for the gastronomy of the Hérault and the culinary specialities of Languedoc-Roussillon.
