Caudomato takes its name from an extraordinary plot in Berlou. In Occitan, Caudo means hot and Mato refers to the garrigue (scrubland). This 80-year-old Carignan plot, planted at over 350 meters above sea level in the heart of the Berlou (Hérault) garrigue, faces south. In summer, temperatures can exceed 40°C in this valley bottom — an inferno of heat that these old Carignan vines have faced with quiet vigor for decades on the schist soils of the AOP Saint-Chinian Berlou.

More frequented by wild boars than by humans, this wild plot of Domaine de Cambis concentrates everything that defines the identity of great organic wines from Languedoc: brown schist, intense sun, fragrant garrigue, and old vines that draw their strength from the depths of the soil.

Terroir & Grape Varieties

A blend of Carignan (50%), Grenache (30%) and Syrah (20%), all grown using certified organic farming on the schist soils of the AOP Saint-Chinian Berlou appellation. The old Carignan vines (80 years old) at 350m altitude in Hérault produce concentrated grapes with ripe and appealing tannins — the purest expression of the Berlou schist terroir.

Aromatic Profile

A deep garnet color. On the nose, intense aromas of garrigue (thyme, rosemary, bay leaf) followed by ripe red fruits — the olfactory signature of the schist terroir. The palate is crisp, full of life, with appealing tannins that envelop a beautiful fruity concentration. Spicy and persistent finish, characteristic of old Carignan vines on schist from Saint-Chinian Berlou.

Serving temperature

Serve lightly chilled between 15 and 17°C to appreciate the aromatic freshness of this organic red from AOP Saint-Chinian.

Aging potential

Improves with 4 to 6 years of aging. A terroir wine from Languedoc that reveals its fullness after a few years in the cellar.

Food Pairings

Ideal with roasted white meats, lamb with Provençal herbs, Mediterranean cuisine, tagine, couscous, or characterful cheeses from the Languedoc garrigues. A natural pairing with the gastronomy of Hérault and the culinary specialties of Languedoc-Roussillon.
