Chant des Griots was born of a journey to Mali. In 2009, Martin and Annick Perolari returned from a stay in West Africa where they had met griots — those travelling storytellers who carry the tales from village to village. Back in Berlou (Hérault), they acquired two plots of Viognier and Roussanne adjoining their sour cherry trees (griottiers), and the cuvée found its name.

This organic white wine from AOP Saint-Chinian Berlou is produced under certified Agriculture Biologique (certified organic) on the schist terroirs of Domaine de Cambis, at over 300 metres of altitude. The poor soils and the altitude give the grapes a freshness and a minerality that are rare among white wines of the Languedoc.

Terroir & Grape Varieties

A blend of Viognier (dominant) and Roussanne, grown under Agriculture Biologique on the brown schist of Berlou, at the heart of the AOP Saint-Chinian Berlou appellation. The cool nights of this high-altitude terroir (300m) preserve the aromas and the natural acidity of the white grapes — a signature found nowhere else among the organic wines of the Languedoc. The schist soils bring the saline minerality that characterises the great whites of the appellation.

Aromatic Profile

A golden colour with green highlights. On the nose, fine and elegant aromas of white flowers (acacia, honeysuckle), followed by white fruits (peach, apricot, pear). The palate is fresh and delicate, with a beautiful schist minerality on the finish — a terroir you can drink. A persistent, saline finish, characteristic of the great schist terroirs of Saint-Chinian Berlou.

Serving temperature

Serve chilled between 10 and 12°C to express the full aromatic complexity of this organic white from Saint-Chinian.

Ageing potential

Can be cellared for 3 to 5 years to reveal a lovely aromatic complexity. A white that gains depth with time — one of the rare white wines of the Languedoc made for keeping.

Food Pairings

Excellent as an aperitif or alongside grilled prawns, gratinated mussels, gorgonzola risotto, sea bream tartare with artichokes, or matured sheep's cheeses from the Terrasses du Larzac. A perfect match for the Mediterranean cooking of the Languedoc.
