Schist is an ancient, flaky rock, originating from the old Paleozoic bedrock. It breaks into plates, retains little water and organic matter: a poor soil, exactly what quality vines love.
How schist affects the vine
- Drainage: Water drains quickly, forcing the vine to root deeply and naturally limiting its vigor.
- Heat: The rock stores heat during the day and releases it at night, aiding in consistent ripening.
- Low yields: Fewer grapes, but more concentrated.
What effect in the glass?
Schist wines are generally described as fine, crisp, and mineral, with precise fruit and silky tannins. It's a style that prioritizes elegance and freshness over power.
Schist or clay-limestone: the difference
In Saint-Chinian, ~40% of the soils are schist (in the north) and ~60% are clay-limestone (in the south). Limestone often produces wines that are more round and generous; schist produces wines that are more fine and taut. Two schools, two pleasures.
Berlou schist
