Kalliope is our new born wine! It is made from white grapes vines we had planted six years ago. Kalliope is a wink our great grandmother who was from Crete and her perpetual good mood. It is also the name of one of the children of Greek god Zeus.
This cuvee shows the real potential of white wines made from schists soil. It is fine and complex and has a great minerality. The first try, 2014, is almost perfect and we are happy with it!
The fresh and mineral attack is supported by a nice roundness. It’s an appealing wine that unveil it’s secrets all along the tasting.
Well refreshed it will pair perfectly with fish. For example a tartar of sea bream with artichoke hearts or gorgonzola risotto.
