Caudomato : AOP Saint-Chinian red carignan (50%), grenache (30%), syrah (20%)
Caudomato is the name of a plot on our estate.
In Occitan, "Caudo" means hot and "Mato" refers to the garrigue, the local "forest".
Indeed, this old Carignan plot (80 years old), planted at over 350 meters in altitude amidst the garrigue, faces south.
In summer, the temperature in this valley can easily exceed 40°C in the sun, making it a true heat trap!
More often visited by wild boars than by humans, the area is truly wild and highly representative of the environment we work in: brown schist soils, lots of sun, the garrigue with its wildflowers, and venerable vines often over 70 years old. Upon tasting, Caudomato lives up to its name, offering a wine that reflects our stunning region.
The Carignan vines capture the terroir—on the nose with garrigue aromas, followed by a crisp mouthful full of fruit, accentuated by smooth, rich tannins. Best enjoyed slightly chilled, paired with white meats or Mediterranean cuisine.
